      STEP 1

      Preheat your oven to 375F

      Bring a large* (enough to boil your potatoes in) pot + a large pinch of salt up to a boil

      STEP 2

      Mold your chickpea loafs! If using a pan be sure to just apply a thin coat of oil to the sides!!

      Top with a spoonful of red pepper ketchup glaze!** We used a muffin tin and figured that is what most people would have. If you have a loaf pan you can use that just be careful as your don’t want it to be too thin. Also you can just mold them into patties (slider size) and bake them on parchment sheet.  approx 100g / portion (2 per person)

      Cook in oven for 30 mins. Half way through add an extra topping of red pepper ketchup. When done let sit for ~ 6 minutes before removeing.

      STEP 3

      Remove your potatoes and your carrots + brussels sprouts and cut as shown below

      STEP 4

      Transfer your potatoes into your boiling water and let cook until when stabbing them with a fork/ knife they slide off with out help ~ 15 minutes (longer if you have more potatoes.

      Marinade your carrots & brussel sprouts in your maple and balsamic sauce, mix throughly and add to a baking sheet. Put in the oven and let cook for 20 minutes, rotating once halfway through.

      With about 10 minutes left on your oven timer transfer your gravy to a small sauce pan and put on medium high heat just so it starts to steam and let cook stirring regularly, it should just thicken up nicely. Cook longer for thicker or add splash of water for thinner.

      STEP 5

      When your potatoes are done, Strain water off and in a large pot combine your boiled potatoes & your mashed potato mix. Mash thoroughly to your desired consistency.  Taste and season.

      Add in dinner rolls to warm only 2- 3 minutes. Keep covered to remain soft.

      STEP 6

      Build your plates! Mashed potatoes + gravy on top // Roasted vegetables + slivered almonds // chickpea loafs // Dinner rolls // Cranberry sauce & Enjoy!! 🌿🦄

      red pepper ketchup: roasted red peppers, ketchup, garlic, sugar, apple sauce, maple syrup

      balsamic maple herb marinade: garlic, balsamic vinegar, oregano, thyme, maple, brown sugar

      mash potato mix: coconut milk, garlic powder, oregano, veggie stock, onion powder, canola oil, salt & pepper

      cranberry sauce: frozen cranberry, sugar, orange juice
