TUSCAN SAUSAGE ORZO
1. Bring a large pot of salted water to a boil. Once boiling add in your pasta and let cook for~ 9 minutes. Before you strain your pasta keep ΒΌ of pasta water off to the side.** Strain and set aside.
2. Remove your veggies and cut as shown below.
3. Heat a large pan over medium-high heat with a splash of oil. Once hot, add the diced shallots and cook for about 2 minutes until softened. Then, add the sausage pieces and cook for 5 minutes, stirring occasionally to brown all sides. Add the sun-dried tomatoes and cook for an additional 2 minutes. Toss in the fresh spinach and let it wilt for about 2 minutes, stirring gently. Pour in the alfredo sauce along with 1/4 cup of reserved pasta water, stirring everything together, and cook for 2 minutes. Finally, add the strained orzo pasta, mixing well to coat everything with the sauce. Let it cook for another 3-4 minutes until fully combined and serve with a sprinkle of hemp parm and fresh parsley.
4.Build your dish. Pasta mix on the bottom. Top with your hemp parmesan & diced parsley. As always a drizzle of olive oil and sprinkle of salt & pepper.
