      'Tuna' & Tofu Poke Bowl


      1.In a pot bring 1 1/2 cup of water and your rice + a pinch of salt up to a boil. Once boiling coverand turn down to simmer, let sit for 12-14 minutes.

       2. Cut the vegetables as shown below

      3. Take a small pan and heat it up over medium-high heat. Once it's hot, add your tofu and marinade to the pan. Keep cooking the tofu until all the sauce is absorbed and sticking to the tofu. You should notice the tofu browning around the edges.

      7. To build your dish, start with a layer of rice on the bottom of your bowl. Add your strained watermelon "tuna" and edamame on top of the rice, and then add some diced carrot, radish, and cucumber to the mix. Place your cooked tofu on top of the vegetables and drizzle the dish with poke sauce. Finally, sprinkle some black and white sesame seeds over the top.
