TOFU UDON TERIYAKI
1. Bring a large pot of salted water up to a boil. Once boiling add in your udon and let cook for 2 minutes. Strain off the water and run your noodles under cold water until cold to the touch to stop the cooking process.
GF Option: Rice Noodles: Bring 1 large pot / kettle of water up to a boil. Once boiling remove from heat and cover your noodles and let sit for ~7 minutes or until there is no ‘crunch’ when tasting. Strain off hot water and run your noodles under cold water until cold to the touch to stop the cooking process.
2. Remove your veggies and cut as shown below.
3. Bring a large pan + a splash of oil up to medium high heat. Once your pan is hot add in your shallot + your tofu let cook for 5 minutes. Next add in your carrot & broccolini and let cook for another 10 minutes. Last add in your udon noodles + your teriyaki sauce and mix thoroughly, keep cooking until all the sauce has thickened up and is clinging to the noodles + vegetables.
4. Transfer to a plate and be sure to garnish with your diced green onion & sesame seeds! ENJOY!
