      1. Remove your veggies and cut as shown below.

      2. Bring a large sauce pan / pot (enough to hold about 3 cups of liquid) + a splash of oil up to medium high heat. Once hot add in your red pepper + snow peas & let cook for 5 minutes. Next add in your shallot and cook for another 2 minutes. Along with your broth add 1 cup of water + your rice noodles and let that simmer / reduce for ~ 7 minutes.

      3. Transfer to a bowl and garnish with a squeeze of lime + cilantro + green onion & ENJOY!

        Pro Tip - Use a fork + spoon or chop-sticks + spoon ;)
