Heat a small pan over high heat (no oil needed). Toast each tortilla for 30-45 seconds per side until lightly browned. Keep them covered with a towel until ready to assemble the tacos.
Give your vegetables a quick wash where needed, and cut them as shown below.
Heat a splash of oil in a small pan over medium-high heat. Add half of the diced shallot and cook for about 4 minutes. Stir in the taco mix and 2 tablespoons of water, cooking for around 12 minutes while stirring regularly.
Assemble your tacos by layering the tortilla with taco "meat," shredded cheese, lettuce, tomato, shallot, special sauce, a squeeze of lime, and a pinch of salt and pepper.
