      1. To prepare the tortillas, without using oil, heat a small pan over high heat. Once the pan is hot, toast each tortilla individually for 30-45 seconds. They should be lightly browned on each side. Remember to keep them covered with a towel until you are ready to assemble your tacos.

      2. Give your veggies a quick wash and cut them as shown below. 🌱

      3. In a small pan, heat a splash of oil over medium-high heat. Once hot, add in half of your diced shallot and cook for ~ 4 minutes. Add the taco mix and 2 tablespoons of water, and cook for approximately ~12 minutes, stirring regularly.

      4. To build your tacos, start with a tortilla, then add the taco "meat," shredded cheese, lettuce, tomato, shallot, special sauce, a squeeze of lime, and a pinch of salt and pepper.
