1. Pre-heat your oven to 400F.
2. Remove your veggies and cut as shown below.
3. Cut your tempeh into slices, making sure to cut them at least once so that their thickness is 1/2 of what it was originally. Toss your tempeh in your TLT mix. Do not throw out the mix!
Toss your potatoes + 1/2 your diced shallot in a splash of oil + your seasoning and transfer to a lined baking sheet along with your marinated tempeh slices. Place in the oven and cook for ~20 minutes (depending on your oven the potatoes can take up to 25 - 30 minutes, a knife should come in and out easily when testing a potato) . Half way through add the extra marinade onto your tempeh and flip.
4. Toast your bread.
5. Build your sandwich. Bread- mayo - tempeh - lettuce - tomato - shallot- mayo - bread & potatoes on the side (use some extra mayo as a drizzle & Enjoy!
