      Tempeh BLT

      STEP 1

      Preheat your oven to 400F

      STEP 2

      Remove your veggies and cut as shown below. 

      STEP 3

      Cut your tempeh into slices. Make sure to cut them at least once so the thickness is 1/2 of what it was originally. Toss your tempeh in your tlt mix. DO NOT THROW OUT!

       Toss your potatoes + 1/2 your diced shallot in a splash of oil + your seasoning and transfer to a lined baking sheet along with your marinated tempeh slices. Place in the oven and cook for ~20 minutes (depending on your oven the potatoes can take up to 25 - 30 minutes, a knife should come in and out easily when testing a potato) . Half way through add the extra marinade onto your tempeh and flip.

       Toast your bread.

      STEP 4

      Build your sandwich. Bread- mayo - tempeh - lettuce - tomato - shallot- mayo - bread & potatoes on the side (use some extra mayo as a drizzle & Enjoy!
