      SWEET & SOUR TOFU

      1. Preheat your oven to 400°F.

      2. Bring 1.5 cups of water and your rice, along with a pinch of salt, to a boil. Once boiling, cover the pot, reduce the heat to a simmer, and let it sit for approximately 11 minutes.

      3. Remove your veggies and cut them as shown below.

      4. Toss your diced red pepper, onion, and tofu in a mixture of corn starch and a splash of oil. Transfer the coated ingredients to a lined baking sheet, then place it in the preheated oven and let them cook for 16 minutes.

      5. When your vegetables are approximately 5 minutes away from being done, heat a large pan over medium-high heat. Once hot, add in your sauce and cook it for 1 minute. Next, add in your roasted vegetables and mix everything thoroughly until the sauce thickens enough to cling to the vegetables and tofu.

      7. To assemble your dish, start with rice at the bottom of your plate or bowl. Arrange the saucy vegetables and tofu on top of the rice, and garnish with green onions and sesame seeds.
