Preheat your oven to 400°F.
Bring a pot with 1.5 cups of water, rice, and a pinch of salt to a boil. Once boiling, reduce the heat to a simmer, cover, and let cook for approximately 11 minutes.
Give your vegetables a quick wash where needed, and cut them as shown below.
Toss the tofu in a splash of oil, then transfer it to a lined baking sheet. Bake in the oven for approximately 18 minutes, or until crispy, flipping it about ¾ of the way through for even browning.
When your tofu has about 10 minutes left in the oven, heat a large pan with a splash of oil over medium-high heat. Once hot, add the broccoli and green beans, and cook for approximately 9 minutes, stirring occasionally.
Once the tofu is done roasting, transfer it to the pan with the bourbon sauce. Cook everything together for approximately 7 minutes, stirring occasionally, until the sauce thickens and clings to the tofu and vegetables.
Transfer everything to a plate along with your rice. Garnish with green onion and sesame seeds.
