STEAK TACOS
1. To prepare the tortillas, without using oil, heat a small pan over high heat. Once the pan is hot, toast each tortilla individually for 30-45 seconds. They should be lightly browned on each side. Remember to keep them covered with a towel until you are ready to assemble your tacos.
2. Give your veggies a quick wash and cut them as shown below. π±
3. In a medium to large pan, heat a splash of oil over medium-high heat. Once hot, add in half of your diced shallot and all of your diced mushrooms and cook for ~ 4 minutes. Next add the 'steak' mix and 1 tablespoons of water, and cook for approximately ~12 minutes, stirring regularly or until just starting to brown along the edges.
4. To build your tacos, start with a tortilla, then add the steak + mushrooms mix. Then top with your steak sauce, crumbled tofu feta, diced shallot and diced cilantro + a squeeze of lime, and a pinch of salt and pepper.
