      1. Bring a small pot of water to a boil. Once boiling, remove the udon from the plastic packaging and add it to the boiling water. Cook for only 1-2 minutes. Strain the noodles and rinse them under cold water to stop the cooking process.

      2. Remove the veggies and cut them as shown below.

      3. In a large saucepan, heat a splash of oil over medium-high heat. Once hot, add the mushrooms and cook for 5 minutes or until they start to brown. Then, add the carrot and zucchini and cook for another 5 minutes. Next, add the chorizo and mix well, letting it heat up for 2-3 minutes. Finally, add the udon, sauce, and 1/3 cup of water to the pan. Cook for an additional 5 minutes or until the sauce has thickened and coated the vegetables and noodles.

      4. Build your bowl by placing everything from the pan at the bottom. Garnish with sesame seeds and green onion on top. Enjoy your meal!
