SMASH BURGER

1. Preheat your oven to 400°F.
2. Remove your veggies and cut as shown below.
3. Toss your potato in splash of oil + your seasoning. Transfer to a lined baking sheet and cook in the oven for ~20 minutes.


4. Heat a splash of oil in a medium pan over medium-high heat. Once hot, add the onions and cook until nicely browned. Form the burgers into 2 equal balls, arrange the onions into two small piles in the pan, then place a burger ball on top of each pile and smash down until flat. Cook for about 10–15 minutes, flipping occasionally until the burgers are well browned on both sides. Place a slice of cheese on each burger and either a) transfer the pan to the oven for about 3 minutes to melt the cheese, or b) cover the pan with a lid and add a small splash of water to create steam, which should melt the cheese in about 1 minute.
5. Place the burger buns in the oven to toast for approximately 2 minutes or until they reach your preferred level of toastiness*.



6. To assemble your plate, start with the burger patty topped with cheese, pickles, lettuce, shallot, and smash sauce (saving some for your potatoes). Serve the roasted potatoes on the side.
