      1. Remove your veggies and cut as shown below.

      2. Bring a pan and a large splash of oil up to medium-high heat. Add in your red pepper and onion and let them cook for approximately 5 minutes. Next, add in your tomato mix, rice, strained bean mix, and 1.5 cups of water. Stir regularly and let it cook for approximately 13 minutes. Taste the rice; it should be soft and not crunchy. If it's not ready, cook it longer.

      3. In a separate pan, also at medium high heat add in your  cut sausage pieces and let cook until well browned around the edges. Approx 8 minutes.

      4. With about 3 minutes left, add in your sausage and mix thoroughly. Let it cook for 2 more minutes.

      5. Plate your sausage jambalaya and garnish with chopped green onions, cilantro, and a pinch of salt and pepper, as desired. Serve hot and enjoy!
