Roasted Veggie Tzatziki
Pre heat your oven to 400F.
Bring 1 cup water + your quinoa and a pinch of small pinch of salt up to a boil. Once boiling, cover, turn down to a simmer and let sit for 11 minutes.
Remove your veggies & cut as shown below.
Toss your potatoes + red pepper + zucchini + shallot in a splash of oil + salt and pepper. Transfer everything to a baking sheet along with your marinated chickpea and place in the oven to cook. Remove your veggies + chickpeas after ~ 15 minutes then let your potatoes keep cooking until they are finished ( ovens & preferences vary) :).
Build your bowl. Quinoa on the bottom then topped with all the roasted veggies and a dollop of your vegan tzatziki & a drizzle of olive oil and a pinch of salt and pepper & ENJOY!

tzatziki: tofu, lemon juice, apple cider vinegar, garlic, onion powder, garlic powder, oil
chickpea marinade: garlic powder, paprika, nutritional yeast, chilli flakes, tamari, oil
