      Red Pesto Gnocchi

      STEP 1

      Bring a large pot of water with a pinch of salt up to a boil. Once boiling, add in your gnocchi and let cook for ~ 4 minutes or until the pasta rises to the surface of the water. Strain and set aside, reserving 1/3 cup of pasta water for later use.

      For our gluten free version, simply add your GF penne to the boiling, salted water and cook for 10 minutes, stirring occasionally. Be sure to try a piece before straining to ensure the pasta is cooked to your liking.

      STEP 2

      Remove your veggies and cut as shown below.

      Bring a large pan with a splash of oil up to a medium-high heat. Once your pan is hot add in your shallot and red pepper and let cook for 6 minutes. Next, add in your red pesto, kale, gnocchi (gluten free penne) and reserved pasta water and cook everything together for ~6 minutes. If you forgot to reserve pasta water, substitute 1/3 cup of regular water. 

      STEP 4

      Transfer to a plate and garnish with hemp parmesan, diced parsley, crumbled tofu feta, a drizzle of olive oil, and a sprinkle of salt and pepper. ENJOY! 😊🌸🌿😊🌸🌿
