      Bring 1.5 cup of water + your 3/4 cup rice and a pinch of salt up to a boil. Once boiling turn down to a simmer, cover, and let sit for approx 10 minutes.

      Remove your veggies from your bag and cut as shown below. Dice your green onion as well.😇🌱

      Bring a sauce pan + 1 tbsp of oil up to medium high heat. Once hot add in your diced mushrooms + onion and let cook for ~5 minutes just until they start to sweat and slightly brown. Next add in your peas + carrot & your pineapple and cook for another 3 minutes. Once your rice is done add in your rice along with your sauce + 1/2 of your cashews + 1/2 of your green onion and let cook for ~ 7 minutes. ** if your rice isn’t done when you think your veggies are ready just remove it from the heat and leave it off to the side.

      Build your bowl. Rice mix on the bottom & top with the rest of your green onion and cashews on top.
