      Pineapple Cashew Fried Rice

      STEP 1

      Bring 1 ½ cup of water + your rice + a pinch of salt up to a boil. Once boiling, bring the temperature down to a simmer, cover, and let sit for ~ 12 minutes.

      Remove your veggies and cut as shown below.

      STEP 3

      Bring a large pan + a splash of oil up to medium-high heat. Once hot, add in your onion + your mushrooms and let cook for ~4 minutes, until the veggies just start to brown. Then, add in your pineapple + pea mix and let cook for another 3 minutes.Then, add in your rice + sauce and stir until fully incorporated. Keep stirring occasionally for ~ 3 more minutes and then transfer to a serving bowl.

      STEP 3

      Build your bowl. Rice mix on the bottom & garnish with your green onion & your cashews! ENJOY!
