Peanut Tofu Soba
Bring a large pot of water + a pinch of salt up to a boil. Once boiling add in your soba and let cook for ~7 minutes or until soba is no longer 'crunch'y when trying a piece.
*** before you strain keep 1/2 cup of pasta water for later use**
Run your noodles under cold water until cold to the touch and set aside.
Remove your veggies and cut you peppers into slices and your carrot into sticks. Dice your cilantro
Bring a large sauce pan + a splash of oil up to medium high heat. Once hot add in your tofu and let cook for 5 minutes or until starting to brown. Next add your carrot + red pepper + cabbage and cook for another 5 minutes. Add in your sauce + your pasta water ( 1/4 use regular water if you forgot) and mix throughly while continuing to cook for another 5 minutes before adding your noodles to cook for another 4 minutes or until your sauce is clinging to your noodles.
Plate your noodles and garnish with your cilantro and sesame seeds. ENJOY 😊🌸🌿
