      Peanut Pad Thai

      STEP 1

      Bring a large kettle / pot of water up to a boil. Enough to submerge your rice noodles. Once boiling cover your rice noodles and let them sit for 7 minutes. Once done strain and run under cold water until they are cold to the touch. This is too stop the cooking process so they don't so too soft.

      STEP 1

      Remove your veggies from the bag and cut as shown below.

      STEP 2

      Bring a splash of oil in a sauce pan up to medium high heat. Add in your shallots + tofu and cook for 3 minutes. Next add in your broccoli and cook for another 3 minutes. Red pepper goes in next for another 3 minutes. Then add in your rice noodles + peanut sauce and cook for, you guessed it, 3 more minutes. Lastly add in half your green onion and give one good quick stire

      STEP 4

      Build your bowl. Noodle mix on the bottom and garnished with a squeeze of lime, cilantro & the rest of your green onion! ENJOY!
