      1. Bring a medium-large pot of water + a pinch of salt up to a boil. Once boiling, add in your pasta and let cook for ~ 9 mins. Strain and set aside.

      2. Remove your veggies and cut as shown below.


      3. Bring a large pan with a splash of oil up to medium-high heat. Add in your diced shallot and let cook for ~3 minutes and then add in your mushroom and cook both together for ~ 5 more minutes or until starting to brown on the edges. Next step is to add your 'meat' mix and let cook ~ 6 minutes breaking up as you go. The last step is to add your tomato sauce + 1 Tbsp of water and let cook until the sauce has thickened and your desired consistency has been reached. For a thicker sauce cook a little longer, to thin out add water.


      4. Transfer your pasta to a bowl and don’t forget to garnish with your hemp parmesan + chopped parsley + chilli oil + salt and pepper! Enjoy!!
