MISO MUSHROOM GNOCCHI

1. Bring a large pot of water + a pinch of salt up to a boil. Once boiling add in your gnocchi and let cook for ~4 minutes or until the pasta rises to the surface of the water. Once done strain and set aside.
*** before you strain keep 1/3 cup of pasta water for later use**
2. Remove your veggies from the bag and cut as shown below
3. Bring a large pan with a splash of oil up to medium-high heat. Once hot, add your mushrooms and asparagus and cook for about 7 minutes, until they start to brown. Add your cooked gnocchi and let it cook for 2-3 minutes. Then, add your sauce and 1/3 cup of pasta water (if you forgot, it's okay to add 1/4 cup of regular water). Stir constantly until the sauce thickens up and coats the pasta, which should take about 5-7 minutes. Finally, add half of your parsley and give it one nice stir right before plating.
4. Plate your pasta and garnish with your parsley, salt & pepper and olive oil. ENJOY 😊🌸🌿
