


Preheat your oven to 375Β°F. Place the Lightlife 'Chkn' fillets on a lined baking sheet and bake for about 18-20 minutes, flipping them 3/4 of the way through. Cook a little longer if you prefer a crunchier crust.
Bring a large pot of salted water to a boil. Add the pasta and cook for about 9 minutes, or until fully cooked with no crunch when tasted. Reserve 1/3 cup of pasta water before straining, then strain the rest and set the pasta aside.

Give your vegetables a quick wash where needed, and cut them as shown below.


Heat a large pan over medium-high heat with a splash of oil. Once hot, add the shallots and cook for about 2 minutes. Add the tomato and cook for another 2 minutes, stirring regularly.


Add the spinach, Marry Me sauce, pasta, and 1/3 cup of reserved pasta water (or 1/4 cup of tap water if needed). Cook for 5-6 minutes, stirring occasionally, until the sauce thickens, the spinach wilts, and the sauce clings to the noodles, or until your desired consistency is reached. Cook longer to thicken or add in a splash of water to thin.



Transfer to a bowl, top with the sliced 'Chkn,' and garnish with diced parsley, a drizzle of olive oil, and a pinch of salt and pepper.
