      1. Preheat your oven to 375Β°F. Once heated, transfer your Lightlife 'Chkn' fillets to a lined baking sheet. Cook for approximately 18 minutes, flipping them about 3/4 of the way through. Feel free to cook a little longer if you prefer a crunchier crust.

      2. Bring a large pot of salted water up to a boil. Once boiling add in your pasta and let cook for ~ 9 minutes or until finished. There should be no β€˜crunch’ when trying a piece. Before you strain your pasta keep 1/3 cup of pasta water off to the side. Strain the rest and set aside.

      3. Remove your veggies and cut as shown below.


      4. Heat a large pan over medium-high heat with a splash of oil. Once hot, add your shallots and cook for about 2 minutes. Then, add the tomato and cook for another 2 minutes, stirring regularly. Next, add your spinach, Marry Me sauce, pasta, and 1/3 cup of pasta water (or 1/4 cup tap water if you forgot the pasta water). Let it cook for approximately 5-6 minutes, until the sauce has thickened, the spinach has wilted, and the sauce clings to the noodles, or until you reach your desired consistency.


      5. Transfer to a bowl, top with your cut 'chkn' & garnish with your diced parsley + a drizzle of olive oil & a pinch of salt and pepper & enjoy!!
