      Marinated Chickpea Bowl

      STEP 1

      Pre heat your oven to 375 F

       Bring a kettle / pot of water up to a boil. You need at least 1 cup. Once hot combine your cous cous and 1 cup of your boiling water, cover and let sit for ~ 10 minutes. Fluff with fork.

      GF: Bring 1 cup of water + your 1/2 cup quinoa and a pinch of salt up to a boil. Once boiling turn down to a simmer, cover, and let sit for approx 10 minutes.

      STEP 2

      Remove your veggies and cut as shown below. 

      STEP 3

      Transfer your chickpeas, onion & red pepper to a baking sheet and place in the oven. Set a timer for 17 minutes.

      STEP 4

      Mix your kale with a 2 tbsp of your lemon tahini drizzle. Try and massage the kale as much a possible and set aside.

      STEP 4

      Build your bowl. Quinoa on the bottom, then kale and top with all your oven ingredients. Garnish with your lemon tahini drizzle & parsley + a pinch of salt and pepper, ENJOY! šŸŒæšŸ¦„
