      Bring 1 cup of water, rice, and a pinch of salt to a boil. Reduce to a simmer, cover, and cook for about 12 minutes.

      Heat 1 tbsp of oil in a saucepan over medium-high heat. Add the 'steak' and marinade once hot. Cook for 8-10 minutes, stirring constantly, until the sauce thickens and the 'steak' browns around the edges.

      Assemble your bowl with rice at the base, then layer mango, 'steak,' and the veggie mix. Drizzle peanut sauce over the top and garnish with crushed peanuts, sesame seeds, and a squeeze of lime.
