KIMCHI FRIED RICE
1.Bring your rice, 2 cups of water, and a pinch of salt to a boil. Once boiling, turn down the temperature to simmer, cover, and let sit for 13-15 minutes.
1. Step 2:Remove your veggies and cut as shown.
3:Bring a large pan with 1 tbsp of oil up to medium heat. Once hot, add in your mushrooms and onion. Cook for 4-5 minutes until they just start to brown and soften. Next, add in your broccoli & kimchi and cook for another 5 minutes. When your rice is finished, add it to your pan mixture along with your edamame and sauce. Stir until everything is fully coated, about 5 minutes. Right before you finish, add in half of your green onions and mix quickly.
4.Transfer to a bowl. Sprinkle with the rest of your green onions & ENJOY!! πΏπ
