HEARTY PENNE RAGU
1.Preheat your oven to 350F.
Bring a medium-large pot of water + a pinch of salt up to a boil. Once boiling, add in your pasta and let cook for ~ 9 mins. Strain and set aside.
2. Cut your zucchini as shown below., toss in a splash of olive oil and a pinch of salt and pepper and transfer to a lined baking sheet to cook in the oven for ~ 15 minutes or until browned around the edges,
3. With just a few minutes left on your zucchini, bring a large pan with a splash of oil up to medium-high heat. Add in your ragu + 1 tbsp water, mix, and cook for 5 mins, just until it starts to bubble on the side. Then, add in your baked zucchini, stir to incorporate, then add in your strained pasta. Stir regularly while cooking for another 5 mins.
4. Transfer your pasta to a bowl and don’t forget to garnish with your hemp parmesan + chopped basil + olive oil + salt and pepper! Enjoy!!
