Set your oven to 350°F.
In a pot, bring 1 cup of water, quinoa, and a pinch of salt to a boil. Once boiling, reduce the heat to a simmer, cover, and let it cook for approximately 11 minutes or until the quinoa is tender.
Remove the vegetables and cut them as shown below. Rinse the peas under cold water to refresh them.
Toss the broccoli with a splash of oil, and season with a pinch of salt and pepper. Spread the broccoli evenly on a lined baking sheet and roast in the preheated oven for about 8 minutes, or until slightly crispy and tender.
Start with the cooked quinoa as the base. Arrange the roasted broccoli, peas, and other vegetables on top. Crumble the tofu feta, then drizzle then green goddess sauce. Finish with a sprinkle of everything seasoning.
