      1. Preheat your oven to 375 F. Transfer your chickpeas to a lined baking sheet and let cook in the oven for ~ 16 minutes.

      2. Bring 1.5 cups of water + your quinoa and a pinch of salt up to a boil. Once boiling, turn it down to a simmer, cover & let it sit for around 11 minutes.

      3. Cut your veggies as shown below.

      4. When your quinoa is done, add in 3/4 of your tomatoes, cucumber, pickled onion & parsley + 3/4 of your green goddess sauce. Mix well.

      5. When your chickpeas are done add them to your mixing bowl. Mix well.

      5. Transfer to a bowl. Top with the rest of your vegetables + your green goddess drizzled over top along with your crumbled tofu feta.

      6. ENJOY!
