      1. Remove your veggies and cut as shown below.

      2. Bring a large pan or pot and a splash of oil up to medium-high temperature. Once hot, add in your chopped onion, celery, and carrot and let them cook for approximately 5 minutes or until they start to brown. Next, add in your herb seasoning and cook for another 2 minutes. Then, add in your gnocchi and strained chickpeas and let them cook for 2 more minutes.

      3. Add in your broth along with 1.25 cups of water, and let it simmer for approximately 10 minutes until hot and starting to thicken up. Then, add a large pinch of your vegan mozzarella (saving some for garnish). Let it cook until it reaches your desired consistency. If it's too thick, add water to thin it out or cook it a little longer to thicken it up further.

      4. Plate your gnocchi and chickpea stew and garnish with chopped parsley and a pinch of salt and pepper, as desired. Serve hot and enjoy!
