      1. Pre heat your oven to 375 F.

      Cut your tortilla in half and then into small thin strips. Toss them in a splash of oil and transfer onto a lined baking sheet and place in the oven to cook for 7 - 8 minutes , every 2 minutes quickly shake them up so they all cook evenly and well browned. When done toss in heavy pinch of salt and mix well. Set aside to cool

      2. Bring a kettle or pot of water to a boil. You will need at least 1 cup of boiling water. Once the water is hot, combine your couscous and 1 cup of boiling water in a bowl. Cover and let it sit for approximately 10 minutes. Fluff with a fork.For

      GF option:Bring your quinoa and 1 cup of water to a boil. Once boiling, turn down the heat to a simmer, cover, and let it sit for 11 minutes.

      3. Cut your veggies as shown below.

      4. Build your bowl. Grain on the bottom. Corn mix, avocado, roma tomato on top. Drizzle your sour cream and you seasoning over the corn. Crumble your tofu, squeeze your lime and then top with your corn chips and enjoy!
