1. Bring a large pot of salted water up to a boil. Once boiling add in your pasta & let cook ~ 9 minutes. Before you strain your pasta keep ¼ of pasta water off to the side.** Strain and set aside.
2. Remove your veggies and cut as shown below.
3. Heat a large pan with a splash of oil over medium-high heat. Once hot, add the shallot and let it cook for about 3 minutes.Next, add the brussels sprouts to the pan and cook for another 7 minutes or until they start to brown on the edges.Add the pesto, strained edamame, and 1/4 cup of pasta water. Let them cook for 2 minutes before adding the strained pasta.Mix everything well and let it cook for an additional 3-4 minutes, or until everything is fully coated and sticking to the other ingredients.
4.Build your dish. Pasta mix on the bottom. Top with your crumbled tofu feta,pistachio, hemp parmesan & diced parsley. As always a drizzle of olive oil and sprinkle of salt & pepper.
