BIG MAC TACOS
1. Pre Heat your oven to 375 F.
2.Remove your veggies as cut as shown below.
3. Toss your potatoes in a splash of oil + your potato seasoning and transfer into the over for ~20 minutes or until cooked through.
4. In a medium to large pan (preferably non-stick), heat a splash of oil over medium-high heat. Divide the Impossible ground evenly across your 4 tacos. Depending on the size of your pan, place 1 to 4 tacos face down and cook for about 6 minutes. Flip the tortillas over, add a slice of cheese, and cover the pan if possible. Let it cook for another 2 minutes. Remove from the pan.
5. To build your tacos, start with a tortilla, then top with your lettuce, pickles, mac sauce and diced shallot. Serve with potatoes on the side.
