BBQ CHICKPEA AVOCADO RANCH
1. Preheat your oven to 350 F
2. Bring a kettle/pot of water up to a boil. You need at least 1 cup. Once boiling, combine your cous cous and 1 cup of your boiling water, cover and let sit for ~ 10 minutes. Fluff with fork.
3. Cut your cherry tomatoes in half. Toss your sweet potatoes in a splash of oil + salt and pepper and transfer to a lined baking sheet to cook in the oven for 16 minutes.
6. Transfer to a bowl. Cous-cous on the bottom topped with your spinach, cherry tomato, roasted sweet potato, roasted bbq chickpeas, avocado & ranch!
