Preheat your oven to 400°F.
Give your vegetables a quick wash where needed, and cut them as shown below.
Toss your potatoes in a splash of oil and your potato seasoning, then transfer them to a lined baking sheet along with your marinated tofu. Bake in the oven at 400°F for 18 minutes, flipping the tofu every 6 minutes. With 2 minutes left, add your bread to the baking sheet to toast.
Build your sandwich with mushroom pâté on the bottom, followed by the roasted tofu, cucumber, pickled carrot and daikon, cilantro, jalapeño (optional), and spicy mayo on top. Serve with potatoes on the side.
