Preheat your oven to 400Β°F.
Give your vegetables a quick wash where needed, and cut them as shown below.
Toss your potatoes in a splash of oil and your potato seasoning, then transfer them to a lined baking sheet along with your marinated tofu. Bake in the oven at 400Β°F for 18 minutes, flipping the tofu every 6 minutes. With 2 minutes left, add your bread to the baking sheet to toast.
Build your sandwich with mushroom pΓ’tΓ© on the bottom, followed by the roasted tofu, cucumber, pickled carrot and daikon, cilantro, jalapeΓ±o (optional), and spicy mayo on top. Serve with potatoes on the side.
