      Banh Mi

      1. Pre-heat your oven to 400F.

      2. Remove your veggies and cut as shown below.

      3. Toss your potatoes in a splash of oil + your potato seasoning. Transfer to a lined baking sheet along with your marinated tofu. Bake in the oven for 18 minutes flipping the tofu every 6 minutes. 

      4. With 2 minutes left add in your bread.

      5. Build your sandwich. Mushroom pate on the bottom, then your roasted tofu then topped with your cucumber, pickled carrot & daikon, cilantro, jalapeno (if you want it) and spicy mayo. Potatoes on the side & ENJOY!!!
