      1. Pre heat your oven to 400 F

      2. Bring 1.5 cups of water + your rice and a pinch of salt up to a boil. Once boiling turn down to a simmer, cover, and let sit for ~ 11 minutes

      3. Remove your vegetables and cut as shown below.

      4. Toss your potatoes + cauliflower in a splash of oil + a pinch of salt & pepper and transfer to a lined baking sheet. Bake for ~ 18 minutes.

      5. While your veggies are roasting  bring a large pan + a large splash of oil up to medium high heat. Add in your onion let cook for 5 minutes until they being to sweat. Next add your aloo gobi sauce and let cook for 4 minutes stirring regularly until aromatic. Next add in your diced tomato and cook another 4 minutes. When your roasted veggies are done add them to your pan and let cook for another 5 minutes. Last step is to add in a squeeze of your lime + 1/2 of your cilantro stir and let cook 2 more minutes.

      6. Build your plate. Rice on the bottom - Aloo mix on top & a garnish of your remaining cilantro! ENJOY!
