Southwest Quinoa Bowl
Pre heat your oven to 400 F
Bring 1.5 cups of water + your quinoa and a pinch of salt up to a boil. Once boiling cover, turn down to a simmer and let sit for ~12 minutes
Remove your vegetables and cut as shown below.
Toss your sweet potato in a splash of oil + salt and pepper then transfer to a baking sheet and cook in the oven for ~ 18 minutes until cook through and lightly brown on the edges.
In a separate bowl combine all your other ingredients. Transfer to your serving bowl and garnish with a pinch of salt and pepper & ENJOY!
