Broccoli & Tofu Teriyaki
STEP 1
Preheat your oven to 400F
Bring 1.5 cups of water + pinch of salt and your rice up to a boil. Once boiling, cover, turn down to a simmer and let sit for 11 minutes.
Cut your veggies as shown below.
STEP 2
Toss your tofu, broccoli and shallot in your corn starch. Lightly shake off any extra. Toss in the oven and let bake for ~18 minutes.
STEP 3
With ~ 5 minutes left on your oven timer bring a pan + a splash of oil up to medium high heat. Once hot add in your teriyaki sauce and start to let reduce. When your veggies are done add them to the mix and keep stirring until the sauce has fully thickened up and clings to the ingredients.
STEP 4
Build your bowl. Rice on the bottom, veggies mix on top and garnished with your green onion and your sesame seeds! ENJOY!!
