      Tahini Ginger Soba

      1. Preheat your oven to 375┬░F. Bring a pot of water to a boil. Once boiling, add soba noodles and cook for approximately 9 minutes. Drain the water, then run the noodles under cold water until they are cool to the touch. Set aside.

      2. Cut your veggies as shown.

      3. Toss carrot, zucchini, red pepper in oil, salt, pepper and marinated tofu in a baking sheet and bake for approximately 20 minutes. Cook longer for a crispier texture.

      4. Once your vegetables are done, toss your noodles in ┬ż of your sauce, then transfer to a serving bowl. Top with roasted vegetables, tofu and garnish with the remaining sauce, sesame seeds and diced cilantro. Enjoy!­čî┐
