      Summer Chickpea Salad

      STEP 1

      Pre- heat oven to 350F

      STEP 2

      Remove your veggies and cut as shown below.

      STEP 3

      Transfer your chickpeas to a lined baking sheet and place in the oven for 18 minutes.

      In a separate bowl massage your kale with 1/3 of your dressing. Be sure to cover the kale thoroughly as the massaging and the acid from the dressing brings down that ‘harsh’ kale flavour 

      STEP 4

      Build your salad. Massaged kale as a base + tomato + cucumber + roasted chickpeas + pickled onions & a drizzle of the dressing. Be sure to garnish with your sunflower seeds & diced parsley & ENJOY!
