Bring a medium-large pot of water + a pinch of salt up to a boil. Once boiling, add in your pasta and let cook for ~ 9 mins.
***Before straining keep 1/3 cup of pasta water off to the side for future use. Strain and set aside.
Remove your veggies and cut as shown below.
Bring a large pan with a splash of oil up to medium-high heat. Add diced mushroom and cook for 5 mins, until they start to brown. Next add in your 'meat mix'. and let cook for another 3 minutes stirring regularly. Then add in your stroganoff sauce + your 1/3 pasta water (if your forgot just add 1/4 cup regular water) + your pasta and let cook until the sauce thickens and is clinging to the noodles, approx. 10 minutes. In the last minute add in your strained corn kernels and incorporate.
Plate your pasta, and garnish your green onion and your Montreal steak spice & Enjoy!
