Bring a large pot of salted water up to a boil. Once hot add in your udon and cook for ~1 1/2 minutes, strain, run under cold water until cold to the touch to stop the cooking process and set aside.
Remove your veggies and cut them as shown below.
Bring a large pan + a large splash of oil up to medium high heat. Once hot add in your mushroom, carrot & zucchini pieces and let cook for 7 minutes minutes. Next step is to add in your chorizo and keep cooking for another 7 minutes. Last step is to add in your noodles and sauce, keep stirring/ mixing until the majority of your sauce is clinging to your noodles, should only be a minute or two.
Build your bowl. Noodles on the bottom, green onion & sesame seeds on top & Enjoy!
