      Southwest Quinoa Bowl

      STEP 1

      Preheat your oven to 425F

      Bring 1.5 cup of water + a pinch of salt and your quinoa up to a boil. Once boiling, cover, turn down to a simmer and let sit for ~ 11 minutes.

      STEP 2

      Remove your veggies and cut as shown below

      STEP 3

      Toss your sweet potato in a splash of oil + a pinch of salt & pepper. Transfer to a lined baking sheet and place in the oven to bake for ~ 18 minutes

      STEP 7

      Build you dish. Mix all your ingredients + your citrus dressing and your seasoning and garnish with your avocado **strain the water from your corn + beans & ENJOY!
