Santa- Fe Bowl
Pre heat your oven to 400F
Bring 1 Cup of water + your quinoa and a pinch of salt up to a boil. Once boiling cover, turn down to a simmer and let sit for ~11 minutes
Remove your veggies and cut as shown below.
Toss your sweet potato + shallot & cherry tomato in a splash of oil and a pinch of salt and pepper and transfer to a sheeted baking sheet or pan.
Bake for 18 minutes
Build your bowl. Quinoa on the bottom with your sweet potato + cherry tomato + shallot + black beans + purple cabbage + avocado cilantro & a squeeze of lime and sprinkle of salt & pepper. Don't forget and drizzle your chipotle enjoy! 🌿😜
