      Roasted Veggie Wrap

      STEP 1

      Pre heat your oven to 400 F

      STEP 2

      Remove your vegetables and cut as shown below.

      STEP 3

      Toss your potatoes in your seasoning + a splash of oil and transfer to a lined baking sheet. Toss your onion, red pepper & zucchini in oil  + salt & pepper and place on the same baking sheet. Bake for 18 minutes.

      STEP 4

      Leave your oven on

      Once your vegetables are finished in the oven you can start building your wrap. Spread your bean mix evenly over your tortilla and then top with your roasted veggies + your spinach and wrap tightly. 

      Place back into the oven  and let sit for 6 minutes rotating half way through. Remove from oven and turn off

      STEP 4

      Build your plate. Cut your wrap in half and leave your potatoes on the side and ENJOY!
