Bring your rice + 1.5 cups water & a pinch of salt up to a boil. Once boiling, turn the heat down to simmer, cover & let sit for ~12 mins.
Remove your veggies and cut as shown below. ****There was a substitution of shallot for red onion due to feedback from the last time we did served this dish
Bring a large pan with a splash of oil up to medium-high heat. Add in your diced red onion, and cook for ~2 mins. Then, add in your red pepper and broccoli, and let cook for another 6 mins. Next, add in your tofu and let it cook for 4 mins.
Build your bowl. Rice on the bottom, then sauce + veggies, and then top with cilantro. Enjoy!
