Preheat oven to 375F
Bring 1.5 cup of water + your 3/4 quinoa and a pinch of salt up to a boil. Once boiling turn down to a simmer, cover, and let sit for approx 12 minutes.
remove your vegetables and cook as shown below.
Toss your veggies in oli + salt & pepper and transfer to a baking sheet along with your chickpeas. Bake for 15-17 minute
Once done toss your quinoa + half your roasted vegetables + half your dressing in a bowl. Transfer to a serving plate and top with the rest of your vegetables and the rest of your dressing + a pinch of salt and pepper & Enjoy!!! :)

chickpea marinade: garlic powder, paprika, nutritional yeast, chili flakes, tamari, oil
herbed tahini: tahini, lemon, maple syrup, garlic, tamari, cider vinegar, water, oil, sage, parsley
