Pumpkin Pasta
STEP 1
Bring a medium-large pot of water + a pinch of salt up to a boil.
Once boiling, add in your pasta and let cook for ~ 9 mins. Strain and set aside.
BE SURE TO KEEP 1/3 CUP OF PASTA WATER OFF TO THE SIDE BEFORE YOU STRAIN!!
STEP 2
Remove your veggies and cut as shown below.
STEP 3
Bring a large pan with a splash of oil up to medium-high heat. Add in the diced shallot and cook for 2 mins, until they start to brown. Then, add in your mushrooms and cook for another 5 mins.
Next, add in your pumpkin sauce + your saved pasta water (if you forgot just add 1/2 cup normal water), and cook for ~1 min, stirring constantly. Top off with your spinach, turn down to low and keep stirring until your spinach has wilted.
STEP 4
Build your bowl. Pasta on the bottom with your parsley & a drizzle of olive oil + salt and pepper on top. ENJOY!
