Potato Chorizo Tacos
Cooking your tortillas: Bring a smaller pan up to a high heat. DO NOT USE ANY OIL! Once it is hot, one at a time, place the tortilla in the pan, letting them sit for 30-45 seconds. The tortillas should be JUST starting to brown on each side. BE SURE TO KEEP THEM UNDER A TOWEL UNTIL YOU BUILD YOUR TACOS.
Remove your veggies and cut as shown below.
Bring a large pan + a large splash of oil up to medium high heat. Once hot add 1/2 of your diced shallot + your diced potato. Let cook for ~ 10 minutes until it starts to brown on the edges. Next add in your chorizo mix + 3/4 cup of water and turn the temperature down to medium. Let cook for ~ another 8 minutes stirring regularly until all of the water is absorbed and the chorizo is just starting to brown on the edges.
Your Choice: If you want you can add your cheese here and stir in until melted.of leave on top when plating.
Build your tacos. Tortillas on the bottom + your creme fraiche + your diced roma tomato, cilantro, shallot & shredded cheese. ENJOY!
